At Restaurant Bernard Loiseau,Patrick Berton, who served as sous chef under Bernard Loiseau and has held important responsibilities for more than 20 years even after Loiseau's death, will hand over the baton to sous chef Louis-Philippe Vigilant and announce his retirement in September 2023. The new head chef rose through the carrier under Patrick Berton from 2006 to 2010 and will become sous chef at Saulieu in January 2022. Today, he creates outstanding, uncompromising dishes that are firmly rooted in the frank, distinctive flavours, delicious sauces and terroir that characterize Loiseau. The menu also includes dishes based on the great recipes of the late Bernard Loiseau.
